500g oxtail
200g carrot
1 tablespoon salt
1 onion
2 octagons
1 cinnamon
1 tsp cooking wine
1 tablespoon of soy sauce
1 tablespoon bean paste
1 grass fruit
1 cardamom
2 fragrant leaves
1 tablespoon sugar
Appropriate amount of vegetable oil


Step 1
Rinse the oxtail; Cut into pieces along the joints

Brew with clean water for at least 1 hour, and remember to change the water twice on the way; Prepare auxiliary materials

Pour cold water into the pot, add oxtail at the same time, bring the water to a boil and cook for another 2 minutes; Wash away the blood after fishing out. Put it into the soup pot

Heat the frying pan with oil, add seasonings, cinnamon, fragrant leaves, cardamom, grass, fruits, scallion and ginger, and stir to give a fragrance; Add bean paste and stir fry evenly

Then add cooking wine, soy sauce, white sugar and an appropriate amount of water, and bring to a boil; Pour the boiled soup into oxtail pot, bring to a boil over high heat, turn to low heat and simmer for 2 hours
