Hairtail is an indispensable seafood on my dinner table. Especially during the new year’s festival, hairtail is a necessary delicacy for family dinner. The fresh hairtail is cut into neat fish segments and fried in an oil pan until golden, crisp outside and tender inside. It is simply seasoned. After stewing, each hairtail is wrapped in a super attractive brown color, as well as the delicious soup mixed with the smell of fish, onion and garlic. Each bite is full of happiness.


2 hairtail
Proper amount of raw meal
1 tablespoon soy sauce
10g sugar
1 tablespoon vinegar
Proper amount of salt
2 shallots
Proper amount of ginger
3 cloves garlic
2 octagons
Appropriate amount of pepper


Step 1
Remove the head, tail and internal organs of hairtail, drain the water, and draw several knives on hairtail. (if it is frozen hairtail, it needs to be thawed in cold water first.)

Step 2
Hairtail cut about 4-5cm.

Step 3
Put hairtail in a bowl, add scallion, ginger, salt and cooking wine.

Step 4
Mix well and marinate for 10 minutes.

Step 5
Sprinkle in starch and let the hairtail be evenly coated with starch.

Step 6
Pour an appropriate amount of oil into the pot. After the oil is hot, put the hairtail wrapped in batter into the pot.

Remove when frying double-sided golden yellow. (when frying hairtail, be sure to shape it and turn it over again, otherwise it is easy to stick to the pot and make the hairtail surface incomplete. If you want to save some oil, you can use a pan and choose the way of half frying and half frying.)

Step 8
Change a pot. Pour a little edible oil into the pot. After the oil is hot, add ginger, scallion, garlic, dry pepper and star anise to stir fry until fragrant.

Step 9
Add some boiled water to the pot, add hairtail, soy sauce, vinegar, sugar and salt. (both raw and old pumping are salty. The amount of salt should be properly controlled to prevent it from being too salty.)

Step 10
Boil over high heat and simmer over low heat for 7-8 minutes. Finally, collect the juice over high fire.

Step 11
Put the hairtail on a plate, pour in the soup in the pot, sprinkle with scallion and it's done.
