I used to go to Hunan restaurant and like ordering this dish very much. I bought long eggplant yesterday and decided to try it on my own


About 10 long beans
5 eggplants
Proper amount of oil
3 g salt
3 cloves of garlic
Proper amount of ginger
1 teaspoon soy sauce
Proper fuel consumption
1 red pepper
Proper amount of sugar


Step 1
Break the long beans into sections and soak them in water

Step 2
Cut the long eggplant into sections and salt for 15 minutes

Step 3
Mince garlic and ginger, cut red pepper into strips and set aside

Step 4
Pour proper amount of oil into the pot, put the cleaned beans into the pot and stir fry until the color changes. Set aside

Step 5
After frying the beans, pour in some oil and fry the eggplant until the eggplant is soft. Set aside.

Step 6
Use the remaining oil of fried eggplant, add chopped garlic and ginger, saute until fragrant, then add red pepper, add appropriate amount of soy sauce, sugar and oil
