Braised eggplant is a local famous dish, belonging to Zhejiang cuisine or northeast cuisine. Salty, fresh and sweet, with strong soy sauce flavor. Home cooked food with eggplant as the main ingredient has rich nutritional value, salty and fresh taste and is easy to use.


1 eggplant
1 persimmon pepper
1 egg
Appropriate amount of starch
Appropriate amount of onion, ginger and garlic
30g vegetable oil
1 tablespoon raw soy sauce
2 tablespoons cooking wine
1 tablespoon oyster sauce
1 tablespoon sugar
1 teaspoon chicken essence
1 teaspoon salt


Step 1
Prepare the ingredients and clean them.

Chop onion, ginger and garlic, eggplant, persimmon pepper and tomato, break the egg, pour the egg white on the eggplant block, add an appropriate amount of starch and grasp well.

Put twice as much oil as usual into the frying pan, and pour in eggplant pieces for deep frying

When all the eggplant pieces are golden, take them out and set aside.

Pour the excess oil out of the pot, leave the bottom oil, and explode the chives and ginger.

Pour in persimmon pepper and tomato and stir fry until cooked and rotten.

Pour in Eggplant and stir fry.
