Braised eggplant
I like the braised eggplant in the restaurant, but it takes too much oil to burn eggplant like that! So it’s good to make braised eggplant at home!
Ingredients
500g eggplant2 green peppers
200g pork
2 tablespoons oil
1 tablespoon minced garlic sauce
2 g salt
3 garlic
2 tablespoons raw soy sauce
1 tablespoon cooking wine
A spoonful of soy sauce
1 tablespoon sugar

Step 1
Prepare the ingredients. The eggplant I bought is tender.
Step 2
Cut the eggplant into the shape you like, soak it in light salt water for a few minutes, and then put the basket to dry. When eggplant is soaked in light salt water, we slice green pepper, shred meat, shred garlic and ginger. Use a spoonful of raw smoke, a spoonful of old smoke, a spoonful of sugar, an appropriate amount of salt and several dry red peppers to make a bowl of Soup.

Pour a little oil into the pot, start frying shredded meat with ginger and garlic, and stir out the fat meat oil

When the meat is almost fried, pour in the eggplant and stir fry until the eggplant becomes soft

Keep stir frying. After the eggplant becomes soft, put in green pepper, stir fry a few times, until the adjusted Soup is poured into the pot

Pour in the Soup and stir fry it a few times. Then squeeze in an appropriate amount of minced garlic sauce and stir fry it. Then pour half a bowl of water next to the pot, pour on the lid and stew for four or five minutes.
Step 7
When the Soup is almost dry, add chicken essence or monosodium glutamate, sprinkle with scallions and take out.
