Eggplant is a kind of nutritious food. Because eggplant is easy to absorb oil, it is more time to cook vegetable dishes with eggplant. “Vegetarian baked diced eggplant” is one of my favorite practices, simple ingredients, fast and convenient practices.


2 eggplant
2 peppers
1 tbsp oil
6 g salt
2G monosodium glutamate
Appropriate amount of scallion and garlic
1 tbsp soy sauce


Step 1
Main and auxiliary ingredients: eggplant and pepper

Wash and dice eggplant

Step 3
Wash pepper and cut into pieces

Chopped scallion and garlic

Heat oil and stir fry with scallion and garlic

Add diced eggplant

Stir fry evenly and add raw soy sauce

Bring to a boil and season with salt. Cook for 5 minutes until the diced eggplant is ripe

Add pepper

Step 10
Add monosodium glutamate to make it fresh, stir fry evenly and turn off the fire

Take out the pot and put it on the plate, and then serve
