One day my daughter asked me to take a stewed chicken and rice back from work, so I ordered a takeout and went home to give my daughter a taste – it’s not delicious! So I had the idea of making braised chicken by myself.

Ingredients

2 chicken legs
8 dried mushrooms
1 potato
Half a carrot
1 / 4 onion
1 tablespoon cooking wine
1 tablespoon raw soy sauce
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 tablespoon rock sugar
1 tablespoon chili sauce
A little pepper
3 slices of ginger
2 cloves garlic
1 shallot

Directions

Step 1
Cut chicken legs into large pieces and soak them in clean water to remove blood; Soak dried mushrooms in hot water; Peel and cut potatoes into large pieces and immerse them in water to prevent oxidation; Cut carrots into large pieces; Cut the onion into large pieces.

Step 2
Prepare seasonings, 1 tablespoon of cooking wine, oyster sauce, soy sauce, soy sauce and rock sugar, a little pepper, chopped green onion, ginger and garlic, and 1 tablespoon of chili sauce.

Step 3
Squeeze out the water from the soft mushrooms and cut them into large pieces. The large ones can be cut into 2 ~ 4 pieces, and the small ones don't have to be cut.

Add cooking wine, oyster sauce, raw soy sauce, soy sauce and pepper powder to the dried chicken nuggets, grasp and pinch for a few minutes, cover with fresh-keeping film and marinate for more than half an hour.

Put oil in the pot, fry shallots, ginger and minced garlic, add rock sugar and fry until dissolved.

Add the marinated chicken pieces and pour in the sauce.

Add carrots, potatoes and mushrooms and stir fry evenly. OK, pour in the chicken nuggets together with the sauce.

Add a tablespoon of chili sauce and stir fry well. Change the cast iron pot (it's OK not to change it). Add water without exceeding the ingredients, cover it and boil over high heat to low heat.

Step 9
When the potatoes are cooked, you can easily insert the onions with chopsticks. When the onions are cooked, you can taste them and adjust the taste.

Step 10
Put a bowl of rice on the plate, spoon a lot of braised chicken, pour on the fragrant soup, and eat it.
