Six Antarctic fish
A pickled radish
3 peppers
3 cloves of garlic
A piece of ginger
A green onion
1 teaspoon of soy sauce
1 teaspoon pepper
3 g Sugar
1 teaspoon vinegar
1 teaspoon cooking wine
4 g salt


Step 1
Cut pickled radish into long strips, cut off the hot pepper, chop onion, ginger and garlic, set aside

Step 2
Remove scales and viscera of Antarctic fish, wash and marinate with salt and cooking wine for about 15 minutes

Step 3
Put the marinated Antarctic fish into the hot oil pan and fry it over low heat (the pan should be heated before pouring the oil to avoid sticking to the pan)

Fry until the fish is golden and crisp. Drain the oil

Put a small amount of oil in the pot, add ginger, garlic, pickled radish and pepper, stir fry until hot, add a small amount of water and bring to a boil

Put in the fried Antarctic fish, bring to a boil and turn to a low heat

Add 1 tbsp soy sauce, 1 tbsp cooking wine, 1 tbsp vinegar, 1 tbsp sugar and 1 tbsp pepper to taste. Cover the pan and simmer for about 5 minutes until the fish is cooked

Step 8
Let the soup dry quickly, pour the fish out, pour in the starch, thicken the fish, pour the soup on the plate, and sprinkle with scallion
