Some people may think this dish is an expensive dish at first sight, but in fact, it’s very common! I use the fresh abalone bought in the market. It’s 7 yuan each. It’s very affordable.

3 spring bamboo shoots
Eight abalone
1 onion
2 slices of ginger
1 tsp cooking wine
Half a spoonful of raw soy sauce
1 tablespoon of soy sauce
Half a spoonful of sugar
1 tbsp vegetable oil

Step 1
Cut the slaughtered abalone horizontally and vertically (i.e. flower knife)

Step 2
Peel off the shell of the spring bamboo shoots, wash them, place them horizontally on the cutting board, hold the head of the bamboo shoots in your left hand, pat the bamboo shoots loose with the back of the knife in your right hand, and then cut them into inch sections

Step 3
Heat the oil in the pot (the oil is a little more than the usual fried vegetables). After the ginger slices and scallions are fragrant under the medium fire, take them out and throw them away

Step 4
Turn to high heat, stir fry the lower section of spring bamboo shoots until the bamboo shoots are yellowish and slightly burnt on the edge

Step 5
Pour in small abalone and stir fry for about 30 seconds

Step 6
Add 1 tablespoon cooking wine and stir fry for 10 seconds

Step 7
Turn the heat down and add half a teaspoon of sugar

Step 8
Add 1 tablespoon of soy sauce

Step 9
Add half a spoonful of raw soy sauce and stir fry evenly

Step 10
Pour in half a glass of water and turn the fire

Step 11
After boiling in the pot, cover and turn to medium heat for 10 minutes

Step 12
Open the lid and turn to high heat to collect the thick soup. Sprinkle with Scallion to get out of the pot
