Boiled fish fillet
There are no ingredients in this dish, but after the whole black fish is cleaned up, the head and tail of the fish are removed, the skin is removed and discarded, and then the pieces of fish are taken out, leaving the fish bones to match. It’s very delicious and enjoyable.

6 g salt
2 tbsp Pixian bean paste
3 tbsp pickled pepper sauce
1 tsp sugar
1 teaspoon chicken essence
1 g pepper
2 tbsp cooking wine
1 tbsp vinegar
1 tbsp soy sauce
Appropriate amount of onion, ginger and garlic
A little prickly ash
Proper amount of water starch

Remove the scales and viscera of the black fish and clean it up

Remove the head, tail and skin, then remove the fish meat and bones, rinse them with vinegar water

Slice the rinsed fish

Mix with salt, pepper and cooking wine and marinate for 5 minutes

Add appropriate amount of starch, and gently grasp and size

Hot oil, stir fry shallot, ginger and garlic

Add Pixian Douban sauce and pickled pepper sauce, stir fry the red oil over low heat
