Step 1

Prepare a large basin of cold boiled water (I use the inner tank of the electric rice cooker, which is relatively deep), and add the ice frozen after cooling with boiled water to reduce the temperature of the water as much as possible

At this time, the water at the bottom of the pot will be stained with bubbles of different sizes. Carry the chicken head down into the chicken body. The whole chicken is submerged in the water for 1 minute

Quickly put the chicken into ice water to cool down. Note that the inner cavity of the chicken should also enter ice water for cooling, and then repeat steps 3 and 4 for 12 minutes each time. In this process, the water temperature should be controlled to be slightly boiling between 85-90, and the water cannot boil

The parts with thick meat are soaked for a little longer

The soaking time of a chicken of about 2 kg is about 20 ~ 25 minutes. Judge whether it is ripe. Insert it in the thickest part of the chicken with a toothpick, and then pull it out to see if the juice is clear. Otherwise, continue soaking

Confirm that the chicken skin is ripe, lift it and immerse it in ice water again for 30 seconds to make the chicken skin shrink tightly

Then put it on the steam curtain to control and purify the water, which will naturally drop to room temperature. If it can be lifted, it is best to control and purify the water in the cavity, otherwise one side of the head can be padded up to control the water in the cavity
