Start with a flour tortilla, add refried beans, seasoned beef, avocados, and cheese. Wrap it up, and fry it until golden brown, and drizzle some zesty cilantro cream sauce over the top.
16 ounces can refried beans
1 pound ground beef
1 tablespoon olive oil
2 tablespoons taco seasoning
1 cup onion, finely diced
2 avocados, diced
1 lime juiced
1 cup shredded Mexican cheese
4-6 tablespoons olive oil for frying
3 garlic cloves
1/2 jalapeno pepper, sliced
1 bunch fresh cilantro leaves
1 teaspoon salt
1 cup sour cream
Step 1Scoop beans into a bowl and mix until creamy.
Step 2Heat a skillet over medium heat, add olive oil and ground beef.
Step 3Add the taco seasoning, mix well, and cook for about 2 minutes.
Step 4Add the onions, and cook until the beef is done, stirring often. Remove from heat.
Step 5Place the chopped avocado in a small bowl, squeeze the lime juice over it, and sprinkle with 1/2 tsp salt.
Step 6Spread a spoonful of beans in the center of a tortilla, top with 1-2 tbsp of the beef mixture, then a scoop of avocado, and last a tbsp of cheese.
Step 7Roll the two sides over the filling sealing it in, then roll up the top and bottom pieces to completely cover the filling.
Step 8Place seam side down in a heated skillet with 1-2 tbsp of olive oil.
Step 9Cook until golden brown on both sides.
Step 10Place garlic, jalapeno pepper, and cilantro in a food processor and mix until finely chopped.
Step 11Add the salt and sour cream and mix on high until creamy.\r\nTransfer to a small bowl.
Step 12Serve sauce on top of the chimichangas.
