1 pound tomato puree
3 cups duck broth
1/2 cup diced poblano
1 cup diced onion
4 cloves roasted garlic
2 tablespoons chili powder
2 tablespoons ground cumin
4 tablespoons all purpose flour
2 pounds 85/15 ground beef
1/2 pound chorizo
2 tablespoons ground cumin
1 cup diced green chili
2 tablespoons srichacha
2 tablespoons butter


Step 1
Combine sauce ingredients and simmer for half hour - do the same with the fortifications. Allow to cool. Apply sauce to flour tortillas and fill with the fortifications, roll, and let set. Then bake at 350 degrees for a half hour and 225 degrees for 15 minutes. Baste with clarified butter prior to turning down temp. Add cheese to top to taste. Enjoy!
